SAKURAO DISTILLERY has two whiskies: "SAKURAO," which is aged in a warehouse within the distillery facility, and "TOGAUCHI," which is aged in the TOGAUCHI storage facility, an abandoned tunnel that has been reused.
TWC's selection of Togouchi () is a single cask that was aged for four years in empty Islay malt casks, bringing to the fore the peaty flavor derived from Islay casks and the malty sweetness of Togouchi.
Nose: Warm peat smoke reminiscent of fireplace ashes. This is followed by savory aromas of freshly baked whole grain bread, freshly roasted coffee beans, and a refreshing lemon zest.
Taste: The mouthfeel is softer than one would expect from the powerful smoke aroma, with a pleasant sweet and sour taste of ripe loquat, apricot tea, lemon candy, banana shake and yellow fruit flavors slowly spreading along with the maltiness.
FINISH: A long, deep, sugar-dissolved espresso-like flavor, with oak spice and a hint of smoke passing through the nose.
Comments: A single cask with peat flavors derived from Islay casks and the malty sweetness of Togawachi at the forefront.
It carries the peat smoke of an Islay cask, and by storing the cool air of the forest in the humid environment of the Togouchi Tunnel, the whisky is gentle on the palate and has a complex aroma.
