The distillery "GLENWYVIS", which is the first distillery in the oldest lineage in Japan, held a seminar at the TOKYO Whisky Library the other day!
It is said to be the oldest distillery with a proper name confirmed in history, founded in 2015 in Dingwall, where the Ferintosh distillery existed until 1784, and began operations on St. Andrews Day, November 30, 2017.
The distillery's name comes from Ben Wyvis and Glenskiac, two closed distilleries that share the same lineage.
It is also known as a community distillery because it received support from local residents through crowdfunding.
Local barley (Local Barley) 100%, milled at Bears Malting in Inverness.
Fermentation is mixed unrefined in two patterns, approximately 115 hours and 70 hours.
The pot still is small (2500 l for the first distillation and 1700 l for the redistillation), and the average cut point is 71% to 65%, which is shorter than usual, with no compromise on the middle cut. This is to maximize the malt-derived aroma.
This attention to detail has resulted in a young but fruity aroma.
This bottle is the distillery's first major release. The cask composition is as follows

Tasting Comment
Nose: Gentle sweetness of banana, marshmallow, and white grapes that changes to a jammy sweetness. Porridge and saltiness from the back along with young pear and pineapple.
Mouth: vanilla fudge, sherbet fizz, lemonade, kiwifruit, pear drop. Pleasant acidity with oak spice and sweetness.
Finish: White chocolate, plain yogurt-dipped raspberries and blueberries linger with mild sweetness.
