■Introduction of recommended whiskey
This is a single cask Azumi, made with heavily peated malt, for Bar Fishbone, a Japanese whiskey-centric malt bar in Obihiro, Hokkaido.
The following is a quote from the back label.
"We are pleased to have the opportunity to release a PB of single cask Azumi from Azumi Distillery.
This is my favorite Azumi peated. This is the second single cask Azumi peated since the 2022 release by J's BAR, a well-known store in Ikebukuro, Tokyo, where the owner, Mr. Hasumura, aka Malt Samurai, unfortunately passed away suddenly in February this year.
I was a fan of the Malt Samurai blog and visited his store often when I came to Tokyo, and he also visited our store once. He was a bartender who really loved and loved whiskey.
Since this is also a coincidence, we have decided to pay homage to Mr. Hasumura, who has made a great contribution to the industry with this single cask Azumi Peated.
It was for this reason that Hasumura had his trademark Ray-Bans hung in syrup.
The illustration of the syrup on the label was designed by Mihoko Aoto of Bluepine, an advertising agency based in Hokkaido.
I also had Ray-Baned syrup added to the design.

■Tasting Notes
Nose: Strong peat with ferns and ash, candied kanro, menthol, slightly raw oak woodiness, banana, straw.

Taste: smoke with ferns, soft but slightly spicy mouthfeel, light candied canlo, slightly raw oak woodiness. Aftertaste: smoke, woodiness and candied kanro.

Overall: Nuances typical of Scottish inland heavy peated malts. I found it to be a rather direct type of element, including woodiness, rather than a complex type.
The impression is that more time after opening the bottle will bring more sweetness and unity.
