We have just received a private bottle of single cask Saburomaru II from Shinanoya, a liquor store located in the suburbs of Tokyo.

▶︎ Saburomaru Distillery
Tonami City in Toyama Prefecture is rich in water, greenery, and culture.
It was in 1862 that Wakatsuru Sake Brewery, the parent company of Saburomaru Distillery, started its sake brewing business in this area called Saburomaru.
In 2017, the distillery was reborn as Saburomaru Distillery, and continues to work as a craft distillery to promote the appeal of whiskey from the land of Toyama.

In 2019, he also invented the world's first cast distillation vessel, ZEMON, utilizing the technology of Takaoka copperware, a traditional industry in Takaoka City, Toyama Prefecture.

Fermented with ale yeast and whiskey yeast using 50ppm heavily peated malt.
This vintage is from 2019, the first year the above pot still "ZEMON" was used, and is being bottled as a single cask and cask strength.

With the ever-evolving, ever-evolving passion and curiosity for whisky making as the driving force, we are beginning to weave a new whisky story.
The house style, a peated smoke style, is firmly in place, but with a solid five-year footprint.

■Tasting Notes
Nose: Wild peat smoke, vanilla, banana, dried pineapple, candied temari, gradually becoming ethereal, sunlit studio, wild fire, wood-fired zucchini, the smell of beginning rain, old Japanese house and camphor.

Mouth: full, powerful attack with smoky spread. Peat smoke, vanilla, cold syrup, dried pineapple, ball candy, and bun skin.

Lingering: Dry, peaty & sweet, pleasantly persistent.
Oriental spices such as Chinese herbal medicine.
