We all know that whisky is aged in casks, but have you ever had a whisky before it is aged, i.e., freshly distilled?

In this issue, we will discuss the new pot before it is turned into whiskey.

Whiskey is made by saccharification, fermentation, and distillation of the raw material, grain, to obtain a clear, colorless alcoholic distillate. This is called "new pot," and in the United States it is called "white dog.
While the aging process in casks gives the whiskey its rich aroma and mellow flavor, New Pot has a rough, strong flavor of freshly distilled youth, and is generally not consumed as a beverage.

However, the craftsmen onsite at the distillery continue to make whiskey today through repeated trial and error, imagining the whiskey that has spent a long time in the cask based on the aroma and taste of the new pot.

We hope that all whisky lovers will give it a try.
